  • 6 ounces peeled baby carrots (about 1 1/4 cups, from 16-ounce package)
  • 2 tablespoons butter
  • 1 cup orzo pasta (rice-shaped pasta, about 8 ounces)
  • 1 12 cups water
  • 1 14 cups low sodium chicken broth
  • 1 large garlic clove, minced
  • 14 cup grated parmesan cheese
  • 2 tablespoons chopped green onions
  • 1 teaspoon minced fresh rosemary

  • Place carrots in processor.
  • Using on/off turns, finely chop carrots. Melt butter in heavy medium saucepan over medium heat.
  • Add orzo and carrots; sauté until orzo is golden, about 5 minutes.
  • Add 1 1/2 cups water, broth, and garlic; cook uncovered over medium heat until all liquid is absorbed, stirring frequently, about 15-20 minutes.
  • Stir in cheese, green onions, and rosemary. Season to taste with salt and pepper and serve.

  1. I knew I had to try this when I saw it. Highly addicting! We could make a meal out of it. I changed it slightly, hand chopped the carrots, added red onion, some chopped jalapeños and used all chicken broth. No rosemary or green onions (this time) but fresh parsley. It’s best right after making, so creamy. Good heated up but better right when it’s done. I’ll make this often. Thank you.

  2. This was not only tasty but a really attractive dish to make. We really enjoyed this recipe, however I did tweak it some after it finished cooking. It lends itself to so many variations. Thanks for sharing the recipe. I'll be making it again.

  3. This was good for a side dish everyone actually ate! I left out the green onion, though might saute some yellow onion with the carrots and orzo next time. I added extra garlic and a wee bit of dried rosemary as we don't keep fresh. Forgot to add any extra salt and pepper at the end. It probably could've used it, but everyone ate it without, so that works! I made 3/4 of a recipe and that fed my husband and I and 2 littles with quite a bit leftover.

  1. Sometimes you can just look at a recipe and know you are going to love it and that was exactly the case with this recipe. I have eyed this up for months and finally gave it a try and boy am I glad I did. I only made two changes. The first was to use low fat margarine instead of butter and that worked wonderfully well and cut a lot of fat. The second was with the green onions. I don't like raw onions at all. So, I put them in at the stage where the carrots and orzo were added and they ended up being beautifully done and really added to the taste. I loved this dish and it will be in my regular rotation.   2. I was looking to use up some orzo, and it just so happened that I had every ingredient available at home so I picked this recipe! Was I pleased with the way it turned out. It had a mild and slightly sweet taste. I recently threw out my food processer so I used a mandoline to julienne the carrots. I used less butter and subbed vegetable broth for the chicken broth since we are vegetarians. Thank you for this contribution to a delicious dinner:)
