I love baking cookies. They were the first thing I learned to make and I have made a lot of them. Around Christmas, I end up making a lot of cookies. It’s usually what I offer to bring to gatherings.

Normally I make chocolate chip cookies or sugar cookies but it’s fun to mix it up. Snickerdoodles are a cookie I really like but rarely seem to eat.

A few years ago when trying to decide what cookies I wanted to take to the local recycling coalition December meeting I decided to try to make some snickerdoodles because I never had made them myself. They were delicious!

I like my chocolate chip cookies slightly crunchy on the outside but for me, snickerdoodles must be soft and these are. They scream holidays to me so that’s the main time I make them.

I hadn’t made them recently and decided I should and that I needed to share them. I’m so glad I did because I forgot how much I enjoy them.

Tips for Making Easy Snickerdoodle Cookies

  • When making cookies make sure the butter is room temperature and not cold or melted.
  • If the dough is hard to work with stick them in the fridge for an hour.
  • An easy way to grease your cookie sheet is to use the wrapper from the butter.
  • Use a cookie scoop to keep the cookie size even.
  • To freeze the cookie dough to make later simply line a cookie sheet with wax paper, scoop the dough onto the sheet. Freeze for an hour, then put into a ziplock bag or another airtight container. Pull out and use normally when needed. You may need to bake them for a few extra minutes.

These are some of my favorite things to use when I’m making cookies. My other favorite thing is my KitchenAid stand mixer. It’s a big investment but so worth it if you do a lot of baking.

Delicious and soft snickerdoodles that are easy to make and perfect for around the holidays.

Prep Time 10 minutes

Cook Time 10 minutes

Total Time 20 minutes

Ingredients

  • 3/4 cup butter (softened)
  • 1 cup brown sugar (packed)
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 tsp baking powder
  • 2 cups flour
  • 2 tbsp sugar
  • 1 tsp cinnamon

Instructions

    1. Preheat oven to 400 degrees
    2. Cream butter and sugar.
    3. Add egg and vanilla. Mix well.
    4. Add sifted dry ingredients, stir until well blended.
    5. Make into balls and roll in cinnamon and sugar.
    6. Place on a greased cookie sheet and bake until browned, about 10 minutes.
