i have already shared the traditional bhatura recipe prepared with baking soda & curd which basically helps to fluffy and airy. however, this instant bhature recipe is much easier version or cheat version which prepared with soda water or carbonated water which typically has small amount of sodium bicarbonate in it. further adding some salt to it will yield better result as compared to using simple soda water. soda water option is ideal for those who do not have access to, or allergic to yeast, baking soda.

Ingredients

  • cups maida / plain flour / all-purpose flour / refined flour
  • ½ cup rava / semolina / sooji
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp oil
  • 1 cup soda water, room temperature
  • oil for deep frying
  • 1 cup chana masala / chole masala, for serving

Instructions

  • firstly, in a large mixing bowl take 2½ cups maida.

  • add in ½ cup rava. rava helps to make bhatura soft from inside and crisp from outside.

  • also add 1 tsp sugar, ½ tsp salt and 1 tbsp oil.

  • combine well making sure everything is combined well.

  • now add ½ cup of soda water.

  • knead the dough well adding more soda water as required.

  • prepare smooth and soft dough. do not make too soft dough as it absorbs oil.

  • cover the dough with moist cloth and rest for 30 minutes or more.

  • after 30 minutes, knead dough slightly and pinch a small ball sized dough and flatten.

  • roll the dough evenly into circles using rolling pin dusting maida as required.

  • further, roll and get to a circular shape. roll neither too thin nor too thick.

  • when the oil is very hot, drop one bhatura and, press with the spoon to puff up.

  • also once they begin to puff, splash oil over the bhatura till they puff completely.

  • flip over and fry the bhatura till golden brown all over.

  • then drain the bhatura onto tissue paper to remove excess oil.

  • finally, serve instant bhatura with chana masala / chole masala.
