If you've been reading my posts and tweets, you know by now that I love coffee. I had it in my Ice Cream, in my Cream Caramel, I had it Ice Cold, and in my Eggless Tiramisu. How can I leave it out of my Cookies? It won't happen :). Sharing today Mocha Oatmeal Cookies.


If you are like me (crazy about coffee), you'll enjoy having these Mocha Oatmeal Cookies. I made them soft and chewy, and the best part about baking them is the aroma that filled the kitchen.

I've used quick oats here, just because this is how we like it at my home, feel free to use the type you like.

  • 6 tablespoon butter
  • ½ cup packed brown sugar
  • ½ teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup quick oats
  • 2 tablespoon instant coffee dissolved in 2 teaspoons boiling water

    but, wait untill you try some Indonesian civet cofee, you'll probabky won't love any other cofee my friend....

      I'd love to try some, I tried Indian filtered coffee and went crazy after it, I think I'll check for how to make Indonesian coffee now 🙂

          I always make it with eggs I have never used a substitute, but you can try using two tablespoon cornstarch.

    I made these last night. The texture of the cookies is great, but man... it's like eating coffee in cookie form. I think Ill add chocolate and molasses or chocolate chips to balance out the coffee buzz next time.

        Do they have to be quick oats, or can they be regular oats?

          You can use rolled oats but the texture will be chewer and may take longer time in baking. I never tried rolled oats in this recipe.
