I happen to love a good Brussels sprouts recipe. Shred them for a salad, bake them, roast them...I will eat Brussels sprouts every week when I have them around!

I love making Balsamic Roasted Brussels Sprouts and this recipe is right up there in my list of favorites.

Why I love Roasted Brussels Sprouts with Bacon

Growing up I did not care for Brussels sprouts. I don't think that my tastes changes so much, but that the way in which they're prepared has changed.

So I'll be honest, you probably won't see a recipe for steamed brussels sprouts on here. Like, ever.

But much like oven roasted broccoli, Brussels sprouts are a veggie that completely transform when roasted. Something about the higher temperature makes vegetables taste totally different.

They become a little sweeter thanks to caramelization.

That means as the water roasts from the vegetables, they develop color and a nutty, sweet flavor.

Add then, adding bacon???

Well, you don't need to ask me twice!

The roasted Brussels sprouts with bacon recipe is super easy to make. You can use this as a side for almost any dinner, or make them into a side dish for your holiday table.

And last, this one is totally worth mentioning...

The pan goes from the stovetop to the oven which means less mess and easy clean up!

How to Make Roasted Brussels Sprouts

There are only four - count 'em, FOUR - ingredients to use in this recipe.

Easy, simple, healthy and delicious.

How to Prepare Brussels Sprouts

I like to rinse my Brussels sprouts in a strainer. You could also let them soak in a bowl for a few minutes.

Because of the way they grow in the soil, they can have a little dirt or sediment you'll get out this way as it drains to the bottom of your bowl.

Then, remove any blemished leaves. Usually if I have to do this it's just one little leaf that I'll take out. Think of these as a mini cabbage you're prepping.

Trim off just a small bit of the end, like so.

And then cut them in half.

How to Roast Brussel Sprouts

Step 1: Preheat your pan and oven. We're doing double duty here. I like to use a cast iron skillet to roast my Brussels Sprouts but any pan that can go from stovetop to oven.

Heat your skillet over medium high heat and preheat your oven to 400° F.

Step 2: Wash your sprouts, trim the very ends and cut them in half.

Step 3: Add a drizzle of olive oil plus salt and pepper. Toss to combine.

Step 4: Add the Brussels sprouts to your stovetop pan. Let them cook for 3-4 minutes, then add your bacon. Stir to combine and transfer to your preheated oven.

Step 5: Roast for 20-25 minutes, stirring halfway through. If you happen to forget to stir, it's not the end of the world, but it will help everything to brown uniformly.

Inhale and smell the bacon cooking and the sprouts caramelizing. It's heavenly!

Are Roasted Brussels Sprouts good as leftovers?

Yes! They taste great warm or at room temperature. And if I have to admit it, I'll even eat them cold.

To reheat them you could add them to the oven and reheat on a lower temperature. I just microwave mine because easy wins in my kitchen!

They won't be as crispy when they're reheated in the microwave but all the flavor is right there.

They're great with an over easy egg or two in the morning!

Should I blanche or steam my Brussels sprouts before cooking?

Nope, there's no need! The higher heat of the oven takes care of everything you need to make these roasted Brussels sprouts.

Ingredients

  • 1.5 pounds fresh Brussels sprouts washed, trimmed and cut in half.
  • 4 slices bacon chopped
  • 2 Tablespoons extra virgin olive oil
  • salt and pepper

Instructions

  • Heat a cast iron skillet or other oven-safe pan over medium high heat. Preheat oven to 400 degrees F.

  • In a bowl, combine Brussels sprouts and olive oil. Season with salt and pepper. Toss to combine.

  • Add Brussels sprouts to heated skillet and cook for 3-4 minutes until the sprouts begin to brown. I like to flip most of mine to have the cut side down so they brown nicely.

  • Add the chopped bacon and stir to combine. Place in the oven for 20-25 minutes, stirring halfway through the cooking time. Cook until sprouts are browned and tender and bacon is cooked.

  • Remove from oven and enjoy!

Notes

This is a great recipes for a cast iron skillet! As mentioned in the instructions I like to flip mine to the cut side down so they brown nicely, but you don't have to.

These brussels sprouts taste awesome warm from the oven or at room temperature.
