My family loves this lasagna. I agree that the noodles don't really hold the other ingredients and it is a bit soupy. I think I will try the tortillas next time I make this.

My whole family loved this recipe, preteen, teen and all! Nobody missed having meat and I used corn tortillas instead of noodles. I also topped it with avocado and lime juice.

I haven't made this recipe, but I have one that is very similar, however, instead of lasagna noodles, I use flour tortillas, cut large ones to fit dish and use (layer) as you would the noodles. You must try it and you will love it. Thanks

This was really good. I added shredded chicken breast to the bean & corn mixture, so it was more hearty than the recipe as printed. These were huge portions; 2 of us only ate 1/4 of the recipe, with a green salad alongside. I used regular lasagna noodles and just soaked them in super hot water for a few minutes, and cooked the lasagna longer at a lower temp (350). We had a split decision; I liked the lasagna noodles, but hubby wanted tortillas instead. If I made this again, I would add a little sweetener (honey, agave, sugar, peanut butter) to the tomato mixture to smooth out the acid a bit. I have a feeling it will be better tomorrow.

This has been a regular recipe for me for years. I add more salsa and sauce and corn to make it fill up a larger dish. You won't believe how simple this is, great for pot luck parties too!

This is a great hearty vegetarian dish. For the first time in my life I followed directions exactly and still wouldn't change a thing. We had company over for it and they loved it too. I always associate lasagna with a lot of work, but this took 15 minutes to pull together. We used hot salsa and it was also perfect, and I'm not a fan of anything too hot.

Very nice and different lasagna. However, we added ground beef to the diced tomato+tomato sauce+ cumin mix because otherwise it was going to be too simple. The end product was very very tasty!

To the naysayers who rate it and criticize the recipe before you even make it: don't rate it unless you make it first. Having been one who DID actually make it.. native Central American born husband pronounced it "excellent." He actually liked the combination of pasta and beans. And shocked as some of you may be, many central Americans when eating at home do eat beans AND pasta in the same meal..and carbohydrate snobs would be horrified to know that they even eat mashed potatoes and pasta at the same meal, too. I like the ease of the recipe, the fact that you can turn up or turn down the heat depending on what you use.Would be easy to change it up by adding hamburger, too. I also found that I needed to use more sauce, corn, and cheese and next time will double amounts to make it heartier. Filling,nutritious meals for around $5-6 if made exactly to specifications of the recipe. However, if you use corn tortillas instead of lasagna noodles, it is NOT lasagna.

I wanted meat in this so I browned ground beef with an onion, salt and pepper, then I added the corn and beans to that. I added a little chipotle to the sauce as well. I also used a 9x13 dish and was glad because an 8x8 would be way too small. Overall I thought this was great! I really liked the green onions on top and served it with a little sour cream and a side salad.

This is really good but my husband likes meat so I added ground beef sauteed in taco seasoning and salsa. It is so delicious and easy to make! I highly recommend it!

This was really easy to make and really good! I used the pre-cooked lasagna noodles and my family (including 6 year old son) loved it. I did take another reviewers suggestion and drained the tomatoes.

listened to some of the suggestions and used corn tortillas instead of the noodles (cut 6 tortillas in 1/2, and used 4 halves for each layer). I really wish I would have drained the tomatoes because it was a little watery. Also, next time I'm adding some spice - either chipotle chili powder or maybe a little minced jalapeno - I used medium salsa but I couldn't taste any spice. Other than that, it was really good - can be made ahead as well. Oh yeah, I also added 1 c shredded rotisserie chicken (1/2 to each layer). Really good!

This was terrific, after making a few changes as suggested. Used torrillas, 'cause had them on hand. Added 1 chipotle pepper to tomatoe mixture. Used entire can of corn, why have a bit leftover. My husband is a meateater, but he absolutely loved it. So quick and easy too. Will keep this as a regular staple.

I used WW tortillas and made it in a round pie. I used a can of Rotel, a can of chili ready tomatoes and Savory Sides Santa Fe Corn + the black beans. Great and Spicy! And about 200 calories if you divide it into 8 pieces.

I've made a TON of recipes from Cooking Light and this is the only one my husband has asked me to take out of my book. He did not like the noodles so I have changed the noodles to tortillas and he loves it now.

did not care for this at all. the no=cook noodles are not sturdy enough for all the beans, corn, etc. the tomato flavor was overwhelming, it really needed some other kind of filling. as it is, it would be much better with tortillas, made as a burrito or burrito casserole...

Just love Tex-Mex and made this for my neighbors -- Thought we would miss the meat but no one did. It was excellent and I will pass it on. Definitely a keeper for a meatless meal. Served it with some sour cream and guacamole and everyone loved it.

Loved this! Per other reviews, I used 4 corn tortillas and Ro-Tel diced tomatoes with chiles (actually lowers the calories). Also added ancho chile powder and 8 oz Italian seasoned ground turkey. The salsa you use definitely makes a difference to the overall flavor. Really tasty winter comfort food for relatively few calories. Will definitely make this again and again.

Delicious! Made this recipe for myself and I was not expecting it to taste so good or be so easy to make. A friend who worked late that night and didn't feel like cooking came and got my leftovers. She was happy to have a ready-made healthy super that tasted as good as it looked. I will definatly be making this again!

I followed this recipe except I used corn tortillas cut into the length and width of a lasagna noodle and layered the pan with those. It really added a Mexican flavor to it. Topped it with non-fat sour cream and the green onions. Had it two nights in a row and it was delicious! My husband LOVED it and it was so easy to make! I will definitely be making this dish again!

A really good recipe that I have shared frequently. We have this dish 2-3 times a month during the Winter. I cook the lasagna noodles right in the pan by adding approx. 1/4 cup of water to the tomato mixture. I also use whole wheat noodles to make it a healthier recipe. Enjoy!

This was absolutely delicious! Per other reviewers' suggestions I used a can of Original Rotel (drained) instead of plan diced tomatoes but otherwise followed the instructions to a tee. At the end I took off the foil and let it go a few more minutes in the oven to crisp up the top and evaporate some of the sauce as it was still a little too saucy for me. After letting it rest we dug in and topped with green onions and sour cream - yummy! I served it with corn bread. I plan to make it for an upcoming girls dinner as I know it will be a crowd-pleaser.

This recipe was a great discovery! My family loves Mexican food, as well as lasagna so this recipe was the perfect combination! I used a 9 x 13 pan layering 4 no boil lasagna noodles per layer, and used a roasted red pepper tomato sauce in combination with mild salsa. Added extra corn and black beans and even my extremely picky 10 year old loved this! Will make t his often!

I think I would have to do some tweeking here. I am going to use corn tortillas instead of noodles, and add some beef to make it a hearty supper dish. The tomatoes sound great if using Mexican variety with chilis. Top off with chopped tomato, lettuce and sour cream, wow what a dish. I am having this with a Margarita. Yikes, great stuff!

This was very easy to make, quite tasty and very filling. I used oven-ready lasagna noodles rather than go through the trouble of boiling them and just added a little extra sauce to compensate for that. Instead of plain tomato sauce I used my favourite Classico four cheese pasta sauce for a little extra flavour. Would highly recommend.

My BF and I love this dish! I used whole wheat lasagna (uncooked). I used DRAINED diced tomaoes with chilies. I also added sliced fresh mushrooms. I also used corn/bean salsa. It was very flavorful. Will definitely make it again. I served it with garlic bread.

This is a family favorite! Whole wheat no boil noodles work great with no time adjustment. I use mild salsa for the kids, otherwise they might not eat it as well as they do, and add one and a half cups of cooked shredded chicken to the beans and corn mixture. Definitely drain the diced tomatoes!

I thought this recipe was just okay. I wanted it to have more heft or a little more taste. My kids didn't like it at all (5 and 3). I may try the other suggestions listed here and try again, but I'm unsure if I'll really make again.

I found this recipe to be very tasty and satisfying. I liked the suggestion of adding chicken to the recipe and I think diced peppers would be a welcome addition as well. It was easy to prepare and I served it with a fresh green salad. I think that I will be making this on a regular basis for my family.

I liked this recipe. It is easy to make and very tasty. I added sauteed muxhrooms, as I wanted to use them. I also made it in a larger size dish and added 2 more lasagne noodles. It turned out well. I will make it again. I served it with a cucumber salad.

This is one of my go-to recipes. It's not very fancy, but it is super-easy & satisfying. Sometimes I will add cooked, shredded chicken if I want to increase the protein. If you love the flavor of Mexican food, but want something a little different, this is a great recipe!
