You only need four simple ingredients for this recipe:

  • Fresh Strawberries: In-season, giant, straight-from-the-farm, fresh strawberries are the best, but I happily use imported grocery-store strawberries when our local strawberry season is over. They’re going to be covered in chocolate, after all!
  • White Chocolate Chips: Nestle White Chocolate Morsel are labeled gluten-free.
  • Pink Food Gel Color: Betty Crocker Food Gel Color is labeled gluten-free.
  • Coconut Oil: . Coconut oil adds a smooth sheen to the pink chocolate coating and helps it harden quickly.

Coconut oil serves another key role in this pink treat. Regular gel food color is water-based and will cause the chocolate to seize. We’re going to mix the food color into the coconut oil first, preventing the chocolate from clumping.

Step-by-Step Instructions

Rinse strawberries, and pat them dry. Allow the strawberries to dry completely at room temperature for 30 minutes. While this step requires a little patience, it’s worth it. The chocolate will not stick to the strawberries if they are damp.

Cover a baking sheet with parchment paper and set aside. Wax paper also works.

In a small bowl, use a fork to fully combine coconut oil and 4-6 drops of red or pink gel food color. The color will be vibrant. Once you combine it with the white chocolate, it will lighten to a soft shade of pink.

Place your white chocolate chips in a small, microwave-safe bowl. Melt chocolate in the microwave for 30 seconds. Stir.

Continue melting the white chocolate in additional 15-20 second intervals. Stir well after each time you microwave the chocolate chips. The final white chocolate chips will melt into the rest of the chocolate as you stir.

This step also requires patience. If heated too quickly, the chocolate will clump, and it cannot be saved.

Add the pink coconut oil to the white chocolate and stir with a fork until well-blended and the chocolate is a lovely shade of pink.

Using each strawberry’s leaves/stem as a handle, dip the dry strawberry into the pink chocolate.

Allow excess chocolate to drip back into the bowl of melted chocolate.

Place each chocolate-covered strawberry on the parchment or wax paper to harden.

(If the chocolate is too thin or translucent, let it dry for about 1 minute and dip a second time.)

Allow chocolate to harden for 10-15 minutes and then serve!

Bonus Decorations

Sprinkles

After dipping the strawberries in the pink chocolate, immediately dip them partially in sprinkles while the chocolate is still wet. Or you can sprinkle the decorations on top for a less-is-more look.

Most (not all) Betty Crocker sprinkles are labeled gluten-free. Always double check the label.

Drizzle

Melt 4 oz of Nestle white or dark chocolate and 1 tsp of coconut oil in the microwave for 30 seconds. Stir and continue melting in 15-20 second increments until the chocolate is melted.

Use a spoon to drizzle the chocolate topping back and forth over the chocolate-dipped strawberries.

Storage

I prefer to keep these perfect chocolate-covered strawberries at room temperature and serve them the same day. This is absolutely the ideal way to enjoy them!

If you cannot make and serve the strawberries the same day, or if you have leftovers (unlikely!), they can be stored in the refrigerator for up to 2-3 days.

The chocolate may sweat a little bit when removed from the refrigerator. For best results, line an airtight container with paper towels before adding strawberries and storing them.

  • 2 lb Strawberries

Instructions

  • Rinse strawberries, and pat dry. Allow strawberries to dry completely at room temperature for 30 minutes.

  • Cover a baking sheet with parchment paper. Combine coconut oil and red or pink food coloring in a small bowl. Set aside.

  • Melt white chocolate chips in a microwave-safe container for 30 seconds. Stir. Melt in additional 15-20 second intervals, stirring after each interval.

  • Use a fork to fully mix the pink colored coconut oil into the melted white chocolate.

  • Using each strawberry's leaves/stem as a handle, dip strawberry into the pink chocolate. Allow excess chocolate to drip back into bowl of melted chocolate.

  • Place each chocolate-covered strawberry on parchment paper to harden for 10-15 minutes. Enjoy!

Notes

Optional Decorations:

  • While the pink chocolate is still wet, dip the strawberries partially in crushed gluten-free toppings (pretzels, cookies, graham crackers, nuts, coconut flakes) or sprinkles (Valentine, red, pink, metallic, white pearls). Most, not all, Betty Crocker sprinkles are gluten-free (check the label).
  • While the pink chocolate strawberries are drying, melt 4 oz white or dark Nestle chocolate chips and 1 tsp coconut oil, according to the directions in Step #3. Use a spoon to drizzle the contrasting chocolate back and forth over the pink chocolate covered strawberries.
